Made from 100% Estate Grown Chardonnay. This wine was fermented on skins with thrice daily manual punchdowns for 19 days. Indigenous yeast for initial fermentation and indigenous bacteria for malolactic fermentation. No enzymes or nutrients used. Stainless steel vessels only. Unfiltered and unfined, bottled by hand with minimal sulphur additions.

This is a skin-contact fermented and macerated chardonnay (19 day contact to be exact) that results in pale orange-brassy colour and a spicy, savoury nose of tea, marmalade and spice. Not as overt as many in this genre. It is medium weight with classic County acidity and minerality, tension and mild bitterness. And yes some tannin that goes hand in hand with this process. The length is excellent. You may or may not be a fan of this style, but this a very well rendered example. Tasted August 2024
