Award Winner at 2025 Judgement of Kingston, Judge's Choice + People's Choice 

100% Estate Grown Chardonnay, vineyard planted by Andre Gagne in 2018
Hand-harvested fruit, 15kg totes, October 4th 2023
Whole cluster pressed in a water pressure basket press
Settled for one day
Spontaneous fermentation with a pied de cuve
Alcoholic fermentation in 50% steel and 50% oak barrels
Spontaneous Malo-lactic fermentation & elevage will into summer 2024
Barrel & steel portions blended for bottling
Unfiltered & unfined
Lightly sulphured after Malo & at bottling
Bottled by hand in February of 2025

Growing conditions in 2023 resulted in very ripe fruit with harvest brix at 22.7. The final alcohol was measured at 13.8 (with 13% declared on label). The nose is very distinctive, the mouth feel is rich with great fruit (stone fruit & Meyer lemon) and a finish that lasts forever due to the acid spine. Really shows the unique Hillier lakefront terroir as expressed by Chardonnay.

Tasting Note This pours fairly deep lemon yellow/brass. The nose is both piquant and rich, led by some brine and flint but with considerable spice, fresh cedar bough, hazelnut and honey. It sits on the palate with almost regal bearing, richly textured, broad and mouth-filling yet braced by nervy acidity, and the vaguest spritz. The length is excellent to outstanding and, like any well-written story, the limestone minerality from the shoreline vineyards circles around to punctuate the finish. Certainly enjoyable now but structured to age into the next decade. Tasted twice: November 2025 and January 2026.
