Electrum 2021, Skin Fermented White

• Made from estate grown chardonnay, this is a white wine made like a red wine
• Fruit was de-stemmed and partially crushed with 20% while clusters included in the fermentation vat
• 25 days of fermentation, maceration with punch downs two and three times a day
• At pressing, free run juice and press juice was combined in stainless steel tanks for elevage
• 15% of the wine was aged in a second fill oak barrel
• All of the wine was recombined into a single stainless-steel tank for bottling
• Limited sulphur additions
• VQA Ontario, 11.9% ABV

Tasting Notes

• Beautiful amber color with pleasant acidity, soft tannins and great texture
• Tropical fruit on the nose
• Earthy taste profile
• Ideally paired with Roast Chicken, Roast Pork or assorted Cheese and Charcuterie

Serve moderately chilled
